So my WHS v1 stopped doing backups, so I figure it's a good time to give 2011 a try. I think I have it mostly figured out, but it looks like server backups are now a pain. I dont want to back up the system drive, I dont want to back up the client backups, I just want an easy way to manualy back up some of the shared folders to a 3TB USB drive when I feel they need it. It there an addin or something else to easily do this?

You can use something like SyncToy to take copies off to your USB drive. If you want to have versioning, then you could use Allway Sync, which supports this. I use Allway Sync for my shared folders.

Have you tried manually starting an auto backup?
In Program Files > Windows Home Server> BackupEngine.exe
Run as administrator
In Program Files > Windows Home Server> BackupEngine.exe
Run as administrator

I like the granularity that WHS 2011 provides as far as backups go. I select certain folders and use SyncToy to back them up to an eSATA attached drive, then store the drive in my safe.
