I'm a complete newbie to all this and so this might be a daft question.....
I want to set up WHS11 with a drive extender such as stablebit or drivebender. I'd also like to back up my macs to the server using Time machine. Does the drive Time machine would back up to have to be in a different format to standard NFTS drives? eg HFS+?

No. NTFS is all you need.
Either automatically through a plug in like this one, or manually, a sparse.bundle file is created. It's basically a disk image. It can be stored on an NTFS drive with no issue.
